I am ALWAYS trying to figure out new recipes that can satisfy my entire clan, but with 3 kids 6 and under that isn’t always the easiest. Of course, the biggest struggle is finding something that is at least slightly healthy. Yeah. You know exactly what I’m talking about! I think we finally found a hit that actually includes brussel sprouts! Brussel sprouts happen to be my husband’s favorite veggie but is the one thing I have to pull teeth to get the kids to eat! Adding a ton of Parmesan cheese and some oil seems to have fixed that!

I am 100% a bargain shopper. With a house full of kiddos, I have to be. This recipe didn’t cost much and is perfect for someone who is doing a low carb diet! We used apple chicken sausage but you can use your favorite. The entire recipe only takes one package of chicken sausage, a 2 lb bag of brussel sprouts, 2 tbsp of olive oil, 2 tbsp of sea salt and a 1/2 cup of Parmesan cheese!  I imagine tomato basil chicken sausage would taste amazing in this recipe, I will have to try it next time!

Slice up your chicken sausage

Rinse your brussel sprouts! We don’t usually cut the ends off but this time I did so the kids would be less picky about them.

Toss your brussel sprouts in olive oil, salt and Parmesan cheese. Pour this mix into your pan then add your sliced up chicken sausage. Bake at 400 for 30 minutes or until your brussel sprouts are tender. Yum!

Let us know what you think! This is now a regular hit in my house. I love anything I can make my family and feel good about. I get even more excited if it’s something that doesn’t take up too much time!
