Delicious Stuffed Breakfast Baked Potatoes


These mouthwatering stuffed breakfast baked potatoes will blow your family away.  Trust me.  If you’re looking to shake things up in the breakfast department, give them a try…they’re including foods you already eat for breakfast in a fantastic new way that your family will LOVE.

They are so incredibly easy – you use left over baked potatoes (or you can be like me, and cheat by microwaving them that morning), eggs, cheese, and whatever other stuff you want to throw in there – the possibilities are endless, bacon, broccoli, spinach, kale; heck, you could even toss sausage in there!

Slice a small side off the soon to be stuffed breakfast baked potato and scoop out the insides (set them aside, though, because you can DEFINITELY use them later! (Side note: even if you don’t think you’ll be using them, store in a freezer bag and freeze, you can make potato skins, or add to twice baked potatoes another day!)

Be careful though, if you use freshly microwaved baked potatoes, because they will be hot, and it will burn your hands (lesson learned the hard way over here).

After you’ve scooped the insides, pre-heat your oven to 425 degrees, and get out a cookie sheet.  I like to oil the cookie sheet with olive oil and set it aside. You’ll be using that in a few minutes.

Fill the inside of the potato with whatever you’d like to stuff it, I put cheese in mine because I have picky eaters, but you could be creative as you’d like here; I’d love to fill mine with bacon, cheese, peppers, onion, tomato (but I’ll have to do that next time). Then crack an egg into the potato.


Be careful transferring the filled potatoes onto the cookie sheet as you’d hate to break the yolks.  Then bake at 425 degrees until the egg is fully cooked (mine took about 15 minutes).  The last few minutes the stuffed breakfast baked potatoes are cooking, add some cheese to the top of the egg.  The outsides of the potatoes will get nice and crispy and mouth waveringly delicious. And just like that, they’re done!

Trust me when I say this is putting an entirely new spin on traditional breakfast foods.  My kids are picky eaters and like sugar filled cereal just like everyone else, but they loved these potatoes! Enjoy!
